テレビ番組で魚の神経締めをやっていた。魚の仲卸の人の特集だっのだが、映像で見るのは初めてだ。心臓用のカテーテルを魚の頭から手早くさしてゆく。元気だった魚が一瞬で、コロッといってしまう。魚自身も気づかないうちに死ぬのだという。そのため鮮度が保たれる。ボクも五島列島で神経締めの魚を食べてその鮮度に驚いた。ふつう魚の値段は需要と供給の相場で決まるので、頑張って多く取ると値段が安くなる。しかし神経締めのように質で頑張ると相場に関係ない魚固有の価格をつけることも可能だという。どこで頑張るかで差が出てくるんだなぁ。
