イカの握りの進化形|Evolved Style of Squid Sushi|2020/10/04
ねっとりして旨みが感じられるイカが好きだ。お刺身で日本酒に合わせるのもいいし、握りは必ず食べる。先日行った阿佐ヶ谷のお寿司屋さんで驚いた。イカを透き通るくらいに薄く切ってスライスにして、それらを重ねて握るのだ。それによってシャリとの絡みが抜群によくなる。縦に包丁をいれるのはよくあるけど、横とはすごい。イカとはこういうものという概念を超えたところに進化形が生まれるのだろう。(絵と文:サカキテツ朗)
I like squid that is sticky and has a delicious taste. I like sashimi with sake, and I always eat a squid sushi. I was surprised at the sushi restaurant in Asagaya that I went to the other day. The cheff cut the squid into thin slices so that it is transparent, and then stack them and made sushi. As a result, the entanglement with the rice becomes outstandingly good. It's common to put a knife vertically, but it's amazing horizontally. An evolutionary style will be born beyond the uniderstanding of squid. -Text and illustration by Ted Sakaki
